I am going to change my phone number (also different country code). Is it just switch chip and go? Or do I have to take other actions?

Yeah just switch out the SIM Cards. Should be that easy as long as your iPhone is unlocked by your original carrier (or sold unlocked in some countries).

You should run into those issues, but I always recommend backing up before doing anything major including updating your iPhone in any way. How to back up your devices using iCloud or iTunes - Apple Support Anything could happen 😝
the sim card is just what give a phone number
all the rest is tied to the appleID which has no relation to the sim card as such
