iTunes file conversion

Does iTunes no longer support conversion of songs to MP3? I have a friend that is a swimmer and was looking to buy them a waterproof MP3 player as a gift, but it requires the songs to be in MP3 format. The only conversion option I have in my iTunes is to convert to AAC.
