I own a domain and use it for all of my home devices. Let's say it's example.com.
If I have a Mac whose name is bluebird, out of the box in the System Preferences it appears as bluebird.local
I'd like it to be bluebird.example.com
If I change the name in System Preferences->Sharing, I get bluebirdexamplecom which is not the point. The hostname is fine - I want to change its domain name.
How is this done in OSX? (Yosemite)

It's not really clear what you're asking. The DNS domain name is determined by a name server setting, which is external to the computer. The Bonjour name is always going to be in the ".local" TLD; you can't change that. The computer (sharing) name can be whatever you want. What functional problem are you trying to solve, if any?

I'm not using DHCP.
For example, in Windows, This PC->Change Settings->Computer Name->Change->More and enter example.com
In Linux, I'd change /etc/sysconfig/network and set HOSTNAME to bluebird.example.com

The POSIX hostname is not used in the GUI and there is no way to set it directly (except in OS X Server.) You can, however, do as follows:
