On your Apple Watch: tap on Settings > General > Reset > Erase all Content and Settings.
This will reset your Apple Watch to the factory settings.
You can then pair with your iPhone by following the normal instructions:
Set up your Apple Watch - Apple Support
If offered the option (depending on how your iPhone has been reset), you can choose to restore your watch from backup during set up.
