Now that I've lost two years of gaming attempting to update my iPod Touch to the current version of Candy Crush, could an older version which still works be put in the App Store so that I can download it and start over please?

You need to contact the developer about that.
If this does not work then it appears you are out of luck
Starting when iOS 7 was released, Apple now allows downloading the last compatible version of some apps (iOS 4.2.1 and later only)

You first have to download the non-compatible version on your computer. Then when you try to purchase the version on your iPod you will be offered a compatible version if one exists.
The version saved to my wife's computer (for her iPad) was an older version, so I was able to upload that to my iPod. I am now able to play Candy Crush again, however several hundred levels below where I was. I'm back up to level 14! Who-hoo!! Thanks for the tip nonetheless!
