How do edit the velocity of the notes from the keyboard input. I have a tried a few things but whenever i press the keys on the keyboard the notes always come out at a velocity of 64. Any ideas?

Looking at the ct630 it's very possible that it doesn't have a velocity sensitive keyboard. So I guess you won't be able to get any but the default velocity from midi recording.

Yes, you can create a transformer in the environment.
Open the environment, go to "Clicks and Ports" and delete the cable between Input View and Sequencer Input. Insert a Transformer and cable it accordingly.

If you deselect all regions so the inspector window says "MIDI Thru" at the top, and raise the velocity level, logic will add that amount to the velocity on playback. Not exactly what you asked for, but a simple way to get the same result.
