How to change my iPad Air to have printer print in black and white only on my HP photos art 7520

want to print in black and white only on my printer HP photosmart 7520 from my IPad Air ?

iPad Air, iOS 8.2, I do not have a computer

No way to do that from AirPrint controls, check your printer manual and see if you can do so from there.

Some printer models do not allow a black only setting and, even if they do, they will still use some color in black/white printing. Also, some models will not function at all if just one of the ink tanks is empty.
