When I start to enter an email address the autofill brings up several addresses, many of which are out of date. I can usually decide what the up-to-date address is, but not always.Is there a simple way to remove the unwanted ones?

Delete them from both your Addressbook and also from 'Previous Recipients' in Mail.
Mail's Window menu > Previous Recipients
Remove any entries you do not wish to use.
I should have stressed that I use Safari rather than Mail. The out of date
addresses do not appear in Contacts and so cannot be deleted in that way.

If you are using Safari to access your email, then remove the relevant entries in Safari's Preferences... menu > AutoFill. Click the Edit... button next to the appropriate item.
Thank you for the time and trouble to reply. The only likely category in
Preferences is "using info from my contacts card" but the offending
addresses are not in the contacts list. If I conduct a search for the rogue
addresses the computer tells me that it can't find them. Yet, when I input
the first three letters of an intended email, several addresses appear,
including the rogue ones. An intriguing problem!

The website you are using may populate the address field. If that's the case, research your account preferences for that website. Or, delete cookies and other website data using Safari's Preferences... > Privacy.
