Hi, I have pages 5.5.1 and am trying to highlight the words of a title. I have found that I can highlight the whole line, by going to the control panel, then 'Layout' then 'Background Color', however the whole line highlights as opposed to just the space behind the text.
Is there a way I can restrict it to just the words, not the entire line?

You want the Advanced Options panel selectable from the gear icon in the B, I, U row of buttons on the Format panel. In the Advanced Options panel is Character Fill Color. That is the true highlight coloration in Pages v5.
