If I buy music on my iPhone using the iTunes Store, what happens when I connect my iPhone to my MacBook Pro?
Is the music copied back from the iPhone to the MacBook?
Does the fact that I have checked the box in iTunes to convert high quality music to 128kbps on sync have any impact here? If the music is purchased on the phone, what quality is it at?

No. However, if you purchased the music from the iTunes store on your iTunes ID you can download it to your Mac's iTunes library for free. The iTunes sync is only one way, from the Mac to the mobile device.
Can't answer your second question as I've never purchased music from my mobile device.

I'm still curious about the bitrate question because I've been unable to find an answer by searching, due to the commonness of the terms. I could only turn up a few very old discussions about the iTunes app for OSX/Windows, rather than the iTunes Store app for iOS.
Is anybody else able to advise on the bitrate?
I'd have expected this situation to come up frequently so am surprised it's not documented somewhere.
Ok I can now answer this myself! Posting here in case it's useful to others.
The song purchased on the phone is downloaded directly to the phone at 256kbps.
The same song is then available for download from the cloud into iTunes at 256kbps.
If you download it into iTunes, then sync the iPhone with iTunes, the 256kbps version on the phone is replaced with a 128kbps version (if you have enabled bit rate reduction on sync in iTunes).
So it seems like a pretty good system. 🙂
Also, you can enable automatic music downloads in the iTunes Store preference on your computer. That will get the high quality version onto the computer.
