We may need a little more info if you are asking for more than just how to log out and log back in with another ID. To change the account, go to Settings>iTunes and App Store. Tap on the Apple ID and log out, then log back in with new one.

If that is not what you are referring to, then please take the time to better describe your issue.

You are going to have to recover the password to be able to sign out. Are you just referring to the iTunes and App Stores, or are you referring to Activation?
