Is there a way to display the language code (e.g. EN, FR, ...) instead of the "globe" on the iOS keyboard (the second key on the left bottom of the keyboard)?

When working with multiple languages (I use three different languages every day), it is quite annoying not to know in what language autocorrect will work.

No, there is no way for users to change anything like that. But you can check out the many 3rd party keyboards like Keyman and see if they might have a system for indicating the active language which better meets your needs.

You cannot display the language instead of the globe, but if you tap and hold the globe, you can see the languages available:
