Logic Pro X default volume, express and other controllers

Hello dear Logic experts, Could you kindly help me understand and organize volums correctly. In a MIDI Draw there are Volume, Expression, Note Velocity, Soft Pedal .... Should I adjust them to be like a Panorama which is always on 0 position? That initial position allows me to shift other instrument to left/right and I know that it is truth for any my compositions. Sould I put a Volume and others to 60, to have a room to manipulat and save it as a default? Any ideas experts and thaks in edvance.
