The contents of an iPhone backup are not meant to be viewed; the backups are designed only to be used for doing a full restore to an iOS device. You can view the date and time of a backup (i.e., confirm that a backup exists) by going to iTunes Preferences and clicking Devices at the top of the Preferences window.
