Why is aperture completely changing my photos when I view them from how I chose to take them with my camera?

I'm taking photos with a canon 6D. I'm taking raw pics and changing the settings in my camera, such as white balance, black & white, monochrome etc. I make take the same shot 5 different ways. I download to my I Mac in aperture and the thumbnails are exactly like I took them with my camera. I click on a thumbnail to view an the picture completely changes. Everthing I did to create that photo a certain way with the camera is totally different. Please tell me why????
