i have a company iPad that has just been replaced.It has a lot of encryption on the company apps and due to this am unable to restore from my backup of my previous iPad.
I have a backup of my previous iPad on my iTunes on my macbook air, and wish to restore a particular app and its contents.
can i select to only restore this app and its data

No. As far as iTunes is concerned restore is an all or nothing affair. Some apps allow you to save data either via iTunes to the local file system or using something like Dropbox, but you would have needed to get set up ahead of time for that.
