Will my iPhone lock to a sim only network?

Hi, I am thinking about buying a handset direct from Apple as opposed to entering into a new handset and sim 24 month contract with a network. If I enter into a sim only contract with say EE for 1 month - will my handset then lock to EE? Due to our location I am wanting to test a number of networks to see who provides the best coverage - so I would like the flexibility to change networks as often/as little as possible without costantly having to pay to unlock the phone.
