No. You can designate it as such in some third party apps (when the vendor offers that as an option), but not system wide.
You can't change the default apps for iPhone without jailbreaking, which would void the warranty.
However, if you use an alternative suite of programs, like Google's, the apps will use each other. So, when I find a map in Chrome, Chrome opens the map in the Google map app when i click it. Same for links to maps in gmail.
I knew that you didn't used to be, but I couldn't find anything within the last year to see if it changed. I did find how to go around it, but it's a few steps extra. I like to hit the address on my calendar and take me right to google maps. Guess that may never happen.

Again, it depend on the app in question. Mailbox, which is what i use for mail, does allow for that (I don't use it because I don't agree with your comparison, and have zero trust when it comes to privacy and Google), but it is there. Nor surprisingly, the Gmail mail app does as well.

No, it hasn't, not is recent history.
I also have never heard that you could do it, so I'm not sure where IOSAssistance get's their information.
