Why can't I edit company or institution in my iCloud address? If I edit my address, click on save, and continue, the institution reverts back to what it was.

I don't fully understand what you are saying, but you can't change your iCloud email address once you have created it.
If I go to "Edit Your Apple ID", one selection is "Addresses"--not email addresses, but physical addresses. I should be able to completely edit my home address and shipping address. My address lists where I work under "Company/Institution", which is not part of my home address. It won't allow me to change or delete "Company/Institution".
