Trouble syncing music

Ever since I downloaded Apple Music to my iPhone 5S, I seem to have lost control over what music is synced from my Macbook Air. The songs now on my iPhone which I don't want on there are:

- Old songs previously downloaded/ deleted; and

- Songs I once downloaded from Apple Music but had since got rid of (for these songs which are unchecked on iTunes, iTunes even explicitly says 'these songs will not be synced to any other iOS devices').

I have not changed any settings (have the box checked saying 'Sync only checked songs and videos') and have performed all the updates for both my Macbook Air and iPhone.

Any advice how I can get control back?!
