Transfer files without wi-fi?

Just updated to Yosemite (from Mavericks) which included update of iTunes. How can I transfer files from my MacBook Pro to iPad (or iPhone) when no network available? There used to be an option to transfer using iTunes and a usb cable. Did this go away? Is there a 3rd Party program that will do this?

MacBook Pro, OS X Yosemite (10.10.5)

Tell us more about what's going on. Did you plug your iPad into your MacBook with a USB cable? If so, what happened then?
