You can use upto a 2.2 TB drive for a G5 to be bootable, even larger if unbootable by PPC Macs id GUID partrition scheme is used.
The important thing is that it has to be SATA 1.5 Gb/s compatible, or sometimes higher SATA only if but in the second slot with a SATA 1.5 Gb/s drive in slot 0.
Some drives like many WD drives need a jumper on pins 5&6 to work, other drives may adjust automatically.
