The apps appeared larger and now the four apps on the bottom of the phone are below the screen and cannot see email, phone, messages and Safari.

Try double tapping with 3 fingers to turn Zoom off.

Also could try Settings > General > Reset > Reset Home Screen Layout.
If that does not work try a forced restart. Hold down the Home and Wake/Sleep buttons at the same time for about 15-20 seconds until the Apple logo appears. Ignore the "Slide to power off" text if it comes up. You will not lose anything.
