When you find an app, that is using plenty of data, launch it to see its documents.
Some older apps, like GarageBand, don't store their documents in iCloud Drive, but in a separate area "Documents in the cloud". You can only access these documents by launching the application.

The iCloud Drive in he sidebar of the Finder will show you the application collections for your Mac applications, but the application collectionss for your mobile devices are hidden, also the folders created by applications, that are still using "documents in the cloud", like GarageBand.
To see all files and folders on iCloud Drive, open a Terminal window and copy and paste this line into the Terminal window, then hit "return".
ls ~/Library/Mobile\ Documents
On my Mac I am seeing a listing like this:

The items with cryptic numbers in the name are hidden, when I view iCloud Drive, also some other items.
These hidden folders can be opened from the Terminal with the "open" command. First I switch to the iCloud Drive directory with " cd ~/Library/Mobile\ Documents". Then I add a "; " and enter "open ", followed by the name of the folder.
For example:
cd ~/Library/Mobile\ Documents; open F3LWYJ7GM7~com~apple~garageband10
will open the GarageBand 10 folder, if it exists.
Try, if you can find hidden documents ths way.
