Apple Watch is water resistant but not waterproof. You can wear and use it during exercise, including exposing it to sweat. After workouts or heavy sweating, clean and dry your watch, the band and your skin. To clean it:
- Turn off Apple Watch. Press and hold the side button, then drag the Power Off slider to the right.
- Depress the band release buttons and remove the band.
- Wipe your watch clean with a nonabrasive, lint-free cloth (if necessary, you can also lightly dampen the cloth with fresh water).
- Dry your watch with a nonabrasive, lint-free cloth.

If you record your gym activity via the Workout app, you may find that rhythmic movements (eg running) give better results from the heart rate sensor than irregular movements (eg boxing). It may help to tighten your band before your workout to ensure a snug fit, loosening it again afterwards.

I've been using my Apple Watch while running since I got it. It's performed admirably. The stainless version is bit heavier than the Sport model but other than that, it has the same features, including the same water resistance. If it were me, I wouldn't use one of the leather bands while working out as they may be damaged by sweat. I have a sport band for workouts and a Milanese loop for dressier wear.
If you're lifting weights, move the watch a bit further up your arm, away from your wrist. This will help prevent it from moving around as your wrist flexes as well as cut down on the chances of inadvertent screen shots.

I do use the plastic band while working out though, since it cleans easily.
