Q: Does server have to be constantly running to use caching?
I am using the caching service on my Mac Mini. The server caches the iOS and Mac Update data to an external HDD that is connected to my Mac. Does the Server application have to be open all of the time now? Or can I close it and it will keep cached data?

Applications
All services run in the background independently of the Server app. You only need to open it to make changes or see status information.
