If you still have the previous boot disk, you can put that into an external USB enclosure, and boot from the external disk. Plug in the external disk with your previous bootable disk, and hold the "Option" key to bring up the Startup Manager.

If your iMac came with installation DVD's, then you can boot from the DVD and install the software from the DVD and then proceed to upgrade from there.
If you do not have a bootable external disk, and you do not have an installation DVD, then you may be able to do a network boot (assuming your iMac's firmware has network boot support)

You could make an Apple Store Genius Bar appointment and they would install OS X for you.
NOTE: You may need to format the old Windows disk as an Mac OS Extended (Journaled) file system. This can be done from the opening install window "Utility" menu -> Disk Utility -> Partition. Also set Disk Utility -> Partition -> Options -> GUID Partition Table, which will be needed to boot OS X.
