Hi guys,
I've upgraded my Iphone 5s from iOS 7.1.2 to iOS 9 and i've encountered the white screen with the 'slide to upgrade' message which keeps my phone blocked.
i've tried to restore to previous Ios7.1.2 by using itunes, but it won't allow it because find my iphone isn't turned off even though i've deleted my phone from icloud.com and from windows icloud.
Any clues?

You cannot restore to iOS 7.1.2, that is no longer supported. Apple does not provide for downgrading. See this support document regarding the Slide issue. If the Slide to Upgrade screen won't go away after you update to iOS 9 - Apple Support

I am trying this method you've suggested, but the backed hasn't moved forward for 3 hours. is it normal for a backup to take such a long while?

Not normally no. I would try the Force restart and then attempt again.
