HI Chris.
let me clarify, my old 4s is synced with my email address, as is my new iPhone 6. So I am afraid if I delete content from 4S then it will also automatically delete content from my 6..... I currently receive emails into both devices

Do the 2 steps above.
Nothing will be deleted.
Erasing an iPhone does not erase iCloud contents.
