Friends app language setting?

In the Friends app on my watch there seems to be a setting that is switches the language of both the standard answers and the user interface to another than the default watch language, depending on the Friend you pick. For some of my friends I now have the possibility to use Norwegian standard answers. To me this is great functionality, however, I can't seem to figure out the setting that governs this language switch. Several of my dutch Friends now appear with Norwegian language in my Friends app, while Norwegian friends are stuck with Dutch standard answers. Anyone a clue as to where I should look to change these settings?

The language for dictation and quick replies is set to the same language as the active keyboard on your iPhone (in Messages) for that particular conversation.

To change the language for a conversation:

Lock your iPhone (press the Sleep / Wake button briefly).
Open the conversation with that contact on your watch and tap on Reply.
On your iPhone, press the Sleep / Wake button briefly to display the Lock screen.
Towards the lower left corner of the Lock screen, swipe up on the Messages icon (where Handoff icons appear).
This will open that conversation in Messages on your iPhone.
Press the globe symbol by the space bar on the iPhone keyboard and choose Norwegian or Dutch (or any other preferred keyboard language).
Start typing a reply on your iPhone (one or more characters), then delete it (this sets the keyboard language choice for that conversation).
On your watch, in the Messages app, Cancel out of the reply screen.
Start a new reply in that conversation - the new language will now be used for dictation and short replies within that conversation.
