Try this:
On your iPhone, go to: Settings > General > Siri - disable, pause for a few moments and then re-enable Siri.
If that does not immediately help, try also restarting both devices afterwards. Turn both devices off, then restart your iPhone first. To turn off / restart your watch: press and hold the side button until you see the Power Off slider; drag the slider to turn off. When ready to turn back on, press and hold the side button until you see the Apple logo.

The Apple Watch app on your iPhone takes watch backups automatically, including a fresh one when unpairing via the app. When setting it up again after unpairing, choose to restore your watch from backup when offered the option by the app. Most data and settings will be restored, with some exceptions (eg cards used for Apple Pay on your watch).

In the apple watch app on the iPhone, if you scroll down to Messages, you can change the setting for Audio Messages to Always Dictation instead of Dictation or Audio. This kludge restored the message dictation functionality for me. I think if you look closely, you will see that the colored, filled-in sine waves that appear at the bottom of the display when you are talking to Siri have been replaced by B&W dots on the message dictation screen. I don't know how to switch back to the more robust mic. Dictating replies to incoming messages on the watch is critical functionality to me. Hope this helps.

Thanks! Just got this watch two days ago and would've been extremely disappointed if would've had to take it back already.
