I downloaded the cbeebies app for my kids to play with and tried to set up parental restrictions so they couldn't call China by mistake.
I couldn't figure out how to make it work despite following the Apple instructions - press home button 3 times in quick succession etc etc - so i disbaled it but now lots of my apps are missing and i can't seem to find out how to reinstate them.
Could someone suggest what's going on?

The "Press home button 3 times" is an instruction related to accessibility, not restrictions.
The missing apps are likely those that you have restricted. Check Settings > General > Restrictions.

The link you sent are the instructions i was following but i can't now find where the click 3 times instructions came from.
I didn't actually make any changes when i was following these intructions though. Just created a passcode and enabled the restrictions so i didn't chose any specific apps to restrict.

OK, so what i need to do now is turn off whatever i turned on with the 'triple click' move.
How do i do this?

I don't think i'm in guided access mode and i'm not using Touch ID.

Check whether you're in Guided Access mode by viewing:
Settings > General > Accessibility > Guided Access
Check whether you have restrictions in place at:
Settings > General > Restrictions
Check whether you have turned on other accessibility features at:
Settings > General > Accessibility
