Open up Activity Monitor.app and watch "free" in system memory TAB. You are likely swapping real memory for virtual memory.

I don't have the Activity Monitor app but since I don't have this problem
with my other email account (Mail) I don't think that's it.
What's really puzzling is this doesn't happen with my iPad!

What's really puzzling is this doesn't happen with my iPad!
I find the 'typing lag' in almost any text entry field (including here in ASC) when the combination of open apps gobbles up RAM, requiring the Mac to swap RAM between apps or use virtual memory.
I have seen several folks here state that 4GB of RAM is just adequate to run Yosemite - add any app(s) and one gets the swapping I describe (I am suffering this right now as I type this!)
