That's not a function I've seen in scanner software, Apple or otherwise, unless it is in some very high-end pro scanning apps. Normally, consumers have to take the scan into a photo editor like PhotoShop, Photos, etc, select the black areas and then covert them to red.
If it is available for your scanner, it will be in your scanner software, not Apple's System Preferences.
My scanner, HP, is no longer supported so I have to use the scanner function in System Preferences. I know I can change the color in text edit, but I can't get the scan to be "selected".
In order for scanned text to be recognized as true text it must run through an OCR process. Once that has process has been done then you can open the text in any editor and change the color. However, if the scan is not scanned using an OCR process then text is only recognized as a raster image that cannot be fully edited.
Understand. What model HP? We have a pretty old PhotoSmart C6280 that still gets updates but from Apple not HP. Have you run Updates from the App Store app recently? That's where the HP updates show up for me.
