Do you mean as in capture the stream to individual tracks you can play back as desired and transfer to other devices? iTunes does not do that.

Some places provide download links in a web site, or you can try right clicking on a link and see if there is a "save as" feature. If you are doing this in iTunes, iTunes will store a copy of the podcast in its own media collection.
