I have to run OS X 10.7.5 Lion on my MacBook Air because Foxtel Go doesn't run on anything higher. I can't type and need a Voice to Text app for my emails. Can anyone recommend something for Voice to Text on the old Lion?

You may be able to find an old copy of Nuance Naturally Speaking for Lion. Check with Markspace if their software supports your cell phone under newer operating systems.
