Hello,
since upgrading OSX to 10.11, Safari substitutes "fi" and "fl" with strange characters at least on websites like Facebook and Wikipedia.
I tried to change the encoding of the page and the default one, to no avail.
Any suggestion?

Same issue here as well. Happened to me in an upgrade during the Beta of El Capitan on my 15" MBP Retina. Read somewhere about deleting the default font, but to no avail as well. See attached screen shot example taken from a Facebook post. APPLE HELP!
Try opening Font Book and doing File > Restore Standard Fonts
That seems to have worked Tom! Font book said "No Problems Encountered", but that did the trick. Here's that same screenshot I shared yesterday but after I performed "Restore Standard Fonts". Thanks Tom.
