I found this in the page where apple describes how to use notes:

Note: To use paragraph styles, you must be using upgraded iCloud notes or notes stored on your Mac.

** I thought this meant i needed cloud...but it says right there "notes stored on your mac..." they are... so why isn't the strikethru option in fonts dialog available? I don't have an answer for that.

We used to be able to select text, open the Font dialog box, and choose strikethrough. Why did they remove this?? I found a workaround - not really a good solution but it will work:

1. Select some text.

2. Right click on the text.

3. Choose Font / Styles...

4. Click the "Favorite Styles" radio button in the drop-down dialog box which appears.

5. Click on the drop-down menu just above this button (should say Default to begin with) and select "Struck through".

6. Click Apply.

I hope this works for you. Let me know if it's not clear enough.
