Apple Configurator 2 - Failed Update

I have been using Apple Configurator for the past 2 years and it has been a huge help to the iPad deployment at my company. I downloaded Apple Configurator 2 yesterday and no matter how I try to update an iPad (Update button, right click update, create a blueprint to update to latest iOS Only), each attempt has ended in failure. This failure results in the iPads being placed in DFU mode and my only option at this point is to restore the device... which updates the iPad to the latest iOS! Has anyone else had this issue or something similar? It's driving me nuts and I am not pleased having to essentially go through the process of updating twice for one iPad.


Additional info:

Mac mini

Processor: 2.5 GHz Intel Core i5

Memory: 4GB 1600 MHz DDR3

Made attempts to update a 16GB iPad Air and iPad Air 2

Mac mini, OS X El Capitan (10.11)
