How do you install a legacy version of Java over a newer version of Java?

I just upgraded to El Capitan, WooHoo!, and now my Adobe CS programs won't work because they require a legacy version of Java despite java having been updated countless times since the programs being installed. So now I'm trying to install the a legacy version of Java to be able to run my adobe programs again in El Captain, but how do you do that? Please help!?

MacBook Pro, Mac OS X (10.7.4), 15", 2.5 GHz, i7

You can have every version of Java installed all at the same time.

However, Adobe seems to think that they should hard-code the requirement for Java 6 which can be installed from this download: Java for OS X 2015-001


It may be just that they need a JDK vs a JRE and the easily found Java from Oracle is only a JRE.
