Where is back up of my iPhone to be found on my computer?

It is said that connecting my iPhone to iTunes will create a back up of all my iPhone data. I am worried that if I hit "restore" on my iPhone 5, as recommended by Apple, I will not be able to access that back up for transmission to the "restored" iPhone. How can I be sure that there is a truly functional back up on my MacPro?
