How do I record/mix on Garage Band to assure proper playback volume?

You watch he Level Meter and adjust your input level, that's the purpose of those things. When you record on an Audio Track, make sure the Volume Meter is reads high enough (yellow) without going into red.

Please note, the Volume Slider has no affect on the input gain.

Same thing for mixing. This time you monitor the Master Track. It's level Meter is displayed on top of the Control Bar. You can also make it visible as a Track in the Tracks List (in case you want to add Automation)
