Settings>General>Accessibility>Keyboard> uncheck "Show Lowercase Keys."

Tap the caps lock key but you will always be typing in CAPITAL LETTERS. The change was made so that it was easier to see if you had cap lock on or not. If you see lower case letters, your cap lock key is off.

Settings App > General > Accessibility > Keyboards >Show Lowercase Keys (turn OFF).

However, I would encourage you to give the new design a try for a bit. Once you are used to it, it actually is easier to use.

You can't. Its now a visual cue. If you tap on the shift key, the entire keyboard becomes uppercase so you can tell you are writing in uppercase. Otherwise it gets confusing.
