I’ve seen people boot up their Mac and the boot screen is a white Apple logo on a black background with white progress bar.
My Macbook Pro (Mid-2012 13inch) boots with a white background and grey Apple logo/progress bar.
I can’t see anything in Preferences and was wondering if there’s anything I can do (officially) to get this boot screen. Purely for aesthetic preference.

Try System Preferences>Universal Access.Seeing and select 'white on black'.

This changes all UI colours to their contrasting colour on the colour wheel.
