How can I prevent my emails from dropping off after a few days

Have you tried Settings-> Mail, Contacts,Calendars->Your Mail Acount->Mail Days to Sync. There is a setting there on how many days of email sync to your mailbox. I just looked and my iCloud account doesn't have that setting but my work email does.
