After reviewing your post, it sounds like you want to record sound from iTunes using Quicktime. Do you have a microphone plugged into line in? I would recommend that you read this article, it may be able to help the issue.
How to use QuickTime Player - Apple Support
- To change the recording settings, click the arrow next to the Record button. Then choose your microphone and recording quality.

That is correct.
There are third party apps that will do that for you.
Audacity and Soundflower can do this:

Don't know whether they work properly yet in EC.
