iTunes syncs music, although I do not want that

Both on the iPhone and on the iPad, the software synchronizes music. I take out the hook. Synchronize and then the hooks are back. Whether under "Music snchronisieren" or under the titles or the albums or manually added titles. And the titles are also back... :-(

What can I do to make the hooks definitely no longer appear and the tracks are then no longer on the device?
