itunes restore and reset

I am trying to to reset my iPhone 6s so that I can I can restore a newer back up than the one it currently has. However when I try and reset it, iTunes tells me it has to update to the latest software, however my iPhone as already updated to the latest software. I can't seem to find a way to just get the reset done with.
