I used to have my email set to never delete from trash. I realized that it was deleting every 7 days now so I tried to fix the settings and when I did the option to never delete is gone. When I go into the advanced settings on my email, it only give me the option to delete every day or every week, there are no other options. Is there a way to get the other options back?

I suspect that may be something you'd have to take up with your email provider.
If you don't want the email deleted, don't put it in the trash. Make another folder for old email.
It's not the email provider. I had the other options before and had it set to never. It seems to have just changed since the update. I would assume that if it were the provider it wouldn't give me options at all.
I have iOS 9.0.2 on an iPhone 6s, and with my IMAP account, I have the option to change that to Never, One day, one week, or one month. What troubleshooting have you tried? I see you have a 5s, and it was the same on the 5s. I just replaced it the other day.
I used to have the option of 30 days and never but it's like it just disappeared. I have restarted, deleted the email account and added it back. I don't know what else to try. My issue isn't solved. I accidentally hit that, so anything you know to try I'm open to.
Have you considered not putting email you don't actually want to delete into the trash?
Create another folder for it and file it away instead. Why would you put something you want to keep in the trash?
It's not email that I want to keep, all those are in other folders. They truly are emails that can be deleted but , for example, maybe it's a coupon that I didn't think I'd use in time but later on had a use for it. I just need help figuring out why the options have mysteriously changed to a day and one week but never and 30 days is gone.
Well, you have decided that Meg's suggestion to check with your email provider is not valid, which is what I was going to suggest as well, since it isn't something in the iOS. User troubleshooting steps are restart, reset. Test after each step. Then the only other option I would know to try is to restore your device from a backup, and if that does not fix it, then restore as new. Then before adding any additional content, only add that one email account. If it isn't there after that, it is the provider.
The provider is AOL. I've never had issues with it before and checked in their settings online and can't find anything. This issue only arose after the update, along with my iCloud backup being completely deleted and having to start fresh with a new backup. I may just try using their personal app instead of the Mail app. Thanks for your help.
In case anyone else has this issue, I played with it some more and found a fix. Before, i deleted the account and added it back via the AOL mail account that Apple has preset as an option. I deleted it again and added it back in with the other option and now it gives me all four options of when to empty the trash.
