Computer backups

My icloud memory is full. i decided to backup my iphone data into my laptop.
But when i backup manually to my laptop via itunes, does it includes the app data for example whatsapp text messages and photos? or any other app
When i buy a new iphone can i just plug in connect to itunes and restoer all my apps and its data which is the text messages?
